This summer has been full of lazy, easy dinners. I have a jar of pesto in my refrigerator that I use to spread on sandwiches (I hate mayo) or mix with pasta for a quick dinner.
The other day it occurred to me that I could probably spread it on pizza crust and it would probably taste amazing and I'm right, it does therefore a Meatless Monday dish is born.
Thin Crust Pesto Pizza
1/4 Pioneer Women Pizza Crust
Pesto
Mozzarella cheese
Arugula (optional)
Preheat oven to 500 degrees. Roll out pizza crust as thin as possible and fork holes into the crust to keep it thin. Top with desired amount of pesto. Top with desired amount of cheese. Bake for 8-10 mins. Top with arugula.
