Meatless Monday: Grilled polenta and tomato sauce
The recipe is simple. Slice the polenta to desired shape, brush with oil on each side along with seasoning with salt and pepper. Grill 5 minutes per side and top with prepared or homemade tomato sauce and cheese of your choice. Serve with a nice side of green salad.
It's the perfect meal for hectic weeknights!
