I'll venture to say, 90% of the homes in Bend, Oregon don't have air conditioning and this summer has been brutal. We do have a window unit but I still don't want to be slaving over a hot stove so I sought out summer recipes that don't involve making your kitchen hot!
My inspiration for this dish came from a pin (shocker!) from Pinterest that involved naan. I like naan but prefer pita bread! This yummy dish is easy to make and is a crowd pleaser for the kids (minus the tomatoes for the 5 year old).

Grilled Caprese Pita Pizza

Ingredients
pita bread
olive oil mister or cooking spray
cherry or grape tomatoes, halved
fresh mozzarella balls (ciliegine, if you can find it)
1/2 c. fresh basil ribbons
salt + pepper to taste
1/4 c. balsamic vinegar
Instructions
Heat a grill pan over medium-high heat. Spray both sides of one pita bread with olive oil and place it in the pan, pressing down on the top of it with a spatula to sear. Cook on each side until just beginning to char, about 2-3 minutes. Repeat with the rest of the pita.
Top each pita with tomatoes, cheese, and basil. Season with salt and pepper and drizzle with balsamic vinegar. Cut into wedges and serve.
