I love caprese anything! Salads, green beans, pizza but this pinterest find is now in regular rotation in the Hinderberger household.
We seem to always have the ingredients on hand in the summer: pesto, basil, fresh mozzarella and tomatoes. Pair that with a tasty ciabatta and you have a winner. My husband commented this would probably taste good on any bread and the thought of cute little caprese sliders on dinners rolls at a party seems like the perfect summer BBQ dish!
Summer Caprese Sandwiches

8 slices fresh mozzarella
2 large tomatoes (8 slices)
4 Ciabatta rolls
Spread desired amount of pesto on ciabatta. Top with 2 slices of mozzarella, 2 slices of tomato and desired about of basil leaves. Drizzle desired amount of balsamic vinegar. Take a bite. Doesn't it taste like summer?
