Often, I made these dishes the night before so when we got home, there was no question what was for dinner. This dish was inspired by this dish on pinterest with a few modifications and my love affair with all things caprese this summer.
Penne Caprese Pasta Salad
1 pound whole wheat penne pasta, cooked per package instructions and then cooled
1 pint of cherry tomatoes, chopped in half
1 container of small fresh mozzarella balls (like bocconcini), cut in half
1 bag of organic spinach or arugula
1/4-1/2 cup of salad dressing (I used Trader Joe's Fat Free Balsamic Vinegar)
salt and pepper to taste
Combine cooked penne with tomatoes, mozzarella and greens in a bowl. Add desired amount of salad dressing. Eat right away or chill for a few hours.
